It’s been freezing outside lately, which means a nice warm meal works great for this month’s recipe. This cheesy risotto recipe from Mrs.Drzik is delicious and is perfect for the cold.
What you’re going to need is, 1 Tbsp Butter, Tbsp Olive Oil, 2 tsp Minced Garlic, ¼ cup Minced Onion, 1 cup Arborio Rice, 13 cup White Wine, 4 cups of Vegetable Broth or Stock, ½ cup heavy cream, 1/4cup Shredded Parmesan Cheese, and salt and pepper.
Here’s how you cook it:
Step 1: Place broth or stock in a saucepan and heat on low until barely simmering while preparing the rice.
Step 2: In a separate pan, heat butter and olive oil over medium heat; add garlic and onion and cook until tender (About 3-4 minutes)
Step 3: Add the dry rice; toast the grains for 1-2 minutes before adding any liquid
Step 4: Add the white wine and allow it to reduce until the pan is almost dry again
Step 5: Add about ¾ cup of the simmering broth; stir constantly and cook over medium-low heat until most of the liquid is absorbed; add a little more broth – continuing to cook and stir until all the liquid has been added and rice is cooked al dente.
Step 6: To finish, stir in heavy cream and parmesan cheese; season risotto with salt and pepper
