IRISH APPLE CAKE

OVERVIEW :
This tender cake is packed with apples, recipe can be enjoyed hot or cold – eaten for breakfast, lunch or dinner!
INGREDIENTS :
- 3 cups of flour
- 2 1/2 cups of sugar
- 1 cup of vegetable oil
- 4 eggs
- 1/2 teaspoon salt
- 2 1/2 teaspoons of vanilla
- 3 teaspoons of baking powder
- 1/2 cups of orange juice
- 4 large apples (granny smith)
- Cinnamon
SUGAR/ CINNAMON MIX DIRECTIONS :
- Mix 5 tablespoons of sugar with 2 teaspoons of cinnamon.
DIRECTIONS/ BAKING :
- Peel, core and slice apple slices into wedges, place in a separate bowl.
- Add sugar/ cinnamon mixture into apples, stir well and set aside.
- Then grease and flour pan(s) – either 2 loaf pans or 1 tube pan.
- Mix remaining ingredients with electric mixer following order above until batter gets thick and tacky.
- If using 2 pans, use equal amounts of batter in each pan for each step.
- Put a very thin layer of batter in bottom of pan(s), just enough to cover.
- Layer the apples next arranging side by side to cover most of the pan area then top with thick layer of batter.
- Repeat apple layer on top.
- Finish with remaining batter on top.
- Drizzle juices remaining from apples on top.
- Bake at 350 for 1 – 1 1/2 hours (depending on oven), keep checking with a knife to determine when done.
- Either cover with parchment paper, either left out at room temperature or in refrigerator.
OVERVIEW :
This was overall a fairly easy recipe to follow. It was also very easy to find these ingredients, all of which I had in my house! My whole family loved this recipe!
