OVERVIEW :

This tender cake is packed with apples, recipe can be enjoyed hot or cold – eaten for breakfast, lunch or dinner!

INGREDIENTS :

  • 3 cups of flour
  • 2 1/2 cups of sugar
  • 1 cup of vegetable oil
  • 4 eggs
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons of vanilla
  • 3 teaspoons of baking powder
  • 1/2 cups of orange juice
  • 4 large apples (granny smith)
  • Cinnamon

SUGAR/ CINNAMON MIX DIRECTIONS :

  • Mix 5 tablespoons of sugar with 2 teaspoons of cinnamon.

DIRECTIONS/ BAKING :

  • Peel, core and slice apple slices into wedges, place in a separate bowl.
  • Add sugar/ cinnamon mixture into apples, stir well and set aside.
  • Then grease and flour pan(s) – either 2 loaf pans or 1 tube pan.
  • Mix remaining ingredients with electric mixer following order above until batter gets thick and tacky.
  • If using 2 pans, use equal amounts of batter in each pan for each step.
  • Put a very thin layer of batter in bottom of pan(s), just enough to cover.
  • Layer the apples next arranging side by side to cover most of the pan area then top with thick layer of batter.
  • Repeat apple layer on top.
  • Finish with remaining batter on top.
  • Drizzle juices remaining from apples on top.
  • Bake at 350 for 1 – 1 1/2 hours (depending on oven), keep checking with a knife to determine when done.
  • Either cover with parchment paper, either left out at room temperature or in refrigerator.

OVERVIEW :

This was overall a fairly easy recipe to follow. It was also very easy to find these ingredients, all of which I had in my house! My whole family loved this recipe!
