Cookie Peanut Butter Bars

  • 2 sticks (1 cup) salted butter, at room temperature 
  • 2/3 cup light brown sugar
  • 1/2 cup granulated sugar 
  • 2 large eggs 
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 2-3 cups semi-sweet chocolate chips
  • 3/4 cup creamy peanut butter


  • Preheat oven to 350. Grease 9×13 in baking dish. 
  • Get large mixing bowl. Beat together butter, brown sugar and sugar until mixed. Add the eggs, one at a time. Beat until mixed. Beat in the vanilla. Add the flour, and baking soda, beat until mixed together. Stir in the chocolate chips. 
  • Spread half the dough into the dish. Add peanut butter onto the dough and spread how you like. Add the rest of the dough. Doesn’t have to fully cover peanut butter. Put in oven for 20-22 minutes (Recommend a couple minutes longer). Let cool and then cut into bars. Store for up to 5 days in an airtight container.
